Speedy Sweet Shepherd's Pie

I have been wanting to try a Shepherd's Pie for a while, and since we love sweet potatoes, I thought we should make a sweet potato pie...












What you will need...
  • 5 sweet potatoes, peeled and cut into cubes
  • salt
  • 2 tbsps butter
  • 1/4 cup milk (the amount will depend upon the consistency you like for mashed taters)
  • 1 lb lean ground beef or turkey
  • 1 can vegetarian baked beans (or you can use pinto and make your own BBQ sauce)
  • 1 sweet onion, diced
  • 1 yellow pepper, diced
  • 2 carrots, diced fine
  • 1 clove garlic, minced
  • salt and pepper
  • your favorite BBQ sauce
  • shredded monterey jack cheese to top
In a pot, get the potatoes boiling.  Meanwhile, in a large skillet, start to cook the ground beef or turkey over medium to medium-high heat.  Season with salt and pepper and add the garlic.  Cook a bit and then add the onion and yellow pepper and finely diced carrots.  Cook until the meat or turkey is cooked through and then add the baked beans and a bit of BBQ sauce and bring to a simmer to reduce some of the liquid.  When the sweet potatoes are soft, drain them and add a pinch of salt, the butter, and a splash of milk.  Mash well, adding as much milk as you need a little at a time.  Spoon the meat mixture into a baking dish and top with the sweet potatoes.  Sprinkle with monterey jack cheese and put under the broiler to brown the top...YUM-OLA!!!

How many people can eat...should feed 8 to 10.

Sides to think about...none needed, but it goes great with anything you would eat along side BBQ, such as green beans, greens, or even skillet apples.
