Chunky Sloppy Joes

We wanted more substance to this simple dish, and as you know, I am trying to add beans to a lot of our dishes to save money, so here is what we came up with...










What you will need...
  • 1 tbsp olive oil
  • 1 lb lean beef
  • salt and pepper
  • burger seasoning
  • 2 cloves of garlic, minced
  • 1 onion, diced small
  • 1 yellow pepper, diced small
  • 4 carrots, diced small
  • 1 can of pinto beans, drained
  • 1 can of diced tomatoes, drained
  • 1 can of tomato sauce (8 oz)
  • 1/8 to 1/4 cup ketchup
  • 3 tbsps Worcestershire
  • a splash of vinegar
In a large skillet, heat oil over medium-high heat.  Add beef, salt and pepper, and burger seasoning.  Cook meat, breaking it as you stir occassionally.  When the meat is about half cooked, add garlic.  When the beef is almost cooked through, add the remaining ingredients, some more salt, pepper, and burger seasoning, and cook over medium heat until your vegetables are the consistency you want.  Serve over bread, buns, rice, or just eat it as is..YUM-OLA!!!

Sides to think about...make your own chips or slaw salad.

How many people can eat...should feed 8 to 10 people.
