Beer Bottle Beef

This recipe came at the end of the month, meaning we were down to our last few items for dinner.  We had one lonely winter beer on the shelf and a roast, the perfect pair...



What you will need...
  • shoulder roast (1 to 2 lbs)
  • 1 bottle of beer (we used Sam Adams Winter Lager)
  • 1 can of beef broth
  • 1 onion, sliced
  • 2 cloves garlic, smashed
  • salt and pepper
  • 1 tsp thyme
Pat dry the roast, salt and pepper both sides, rub 1 garlic cloves over the meat, and sprinkle the thyme.  Place the roast in the bottom of the crock pot and let set for a few hours (or over night) in the refrigerator.  Add the sliced onion over the roast, and pour the beer and beef broth over the roast.  Add some more salt and pepper.  Add enough water to cover the roast with liquid.  Cook on super low for about 8 hours.  The smells that you will walk into when you get home are...YUM-OLA!!! 

Sides to think about...great with red potatoes and a veggie, but you could also make sandwiches and dip them into the fabulous broth.

How many can eat...depends on how much roast you use.
