Fiesta Pizza

The original version of this was sooo good, we had to try it again.  Since we had some leftover ground turkey, we decided to season it and use it in place of the pulled chicken.  So really, this is a leftover idea and we went with what we had in the kitchen...



What you will need...
  • 4 whole wheat tortillas
  • 1 tbsp canola oil
  • salt
  • 1/2 pound ground turkey
  • 1 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 1/2 small yellow onion, diced
  • 1/2 cup jalapenos, sliced
  • 1 clove garlic, diced
  • 1/2 cup salsa
  • 1 cup of shredded mexican cheese
Turn the broiler on high.  Brush both sides of each tortilla with oil and season with salt.  Place them on a pizza pan that has wholes in it, two at a time.  Broil each side for 2 to 3 minutes, or right as the tortilla thinks about turning brown...you want them to be a bit crisp.  Turn oven to bake on 425*.  In a pan, saute the garlic, onions and half the peppers in olive oil.  Add the turkey, chili powder, and cumin and cook until the turkey is done.  Top each tortilla (should be a bit crisp from the broiler) with the salsa; add the turkey mixture; add the rest of the peppers; top that with shredded cheese; add the jalopenos.  Bake on 425*, uncovered, for about 15 minutes.  Make four slices out of each individual pizza...YUM-OLA!!! 

Sides to think about...great with a side of steamed mexican veggies or black beans.

How many people can eat...should feed 4 hungry people...super filling!
